I am italian I love to cook italian food all the time. I grew up learning how to cook from my father who is a great cook he taught me everything i know.
You eat chinese and you are hungry an hour later. You eat Italian food and you are not hungry for three days. Both are good.

Well, what do you want to know? I live in Italy. I know that every region, every province, and every city/town for the matter has it's own local cuisine. For example, in the city I live some traditional foods are tortellini in broth, tigelle/crescentine, fried gnocco (a sort of bread), etc. The local cuisine is based on what the land offers you...so towns on the sea-side will have a lot of seafood dishes and towns in the mountains will have a lot of mushroom and meat dishes. Where I live there are a lot of pork dishes because there is a big tradition of raising pigs here. Is this what you meant? LOL.
