hey! i'm doing a project at school and was wondering if any1 could give me any information on italian food!? please help!!

What do you need to know about Italian food?.....here is something: 'Everyone thinks Italians use lots and lots of garlic in their food, not true, Italians from Italy do not. When Italians emigrated to other countries, they struggled to find fresh produce, so they use to mask the taste with Garlic' hence why many Italian restaurants outside of Italy use alot of garlic

- Lots of good info in the internet. Italian food often reflects the region from which it comes and the ingredients available locally. Sicilian cooking reflects a Moorish influence. The remarks about garlic here are specious, garlic is never used to cover up a taste, its a flavor ingredient and the more the better in some regions. Old wives used it as a medicine too. and witches believed it kept evil spirits away, often used as amulets worn around the neck.

- italian food: simple is good, pasta is only seasoned enough when the water smells and taste like the ocean,(salt), garlic/onion, rosemary basil, tomato(roma), cream, italian sausage, extra virgin olive oil(yummy) if u want some idea's here is a few..... artichoke goatcheese angelhair with tomato cream sauce(tomato sauce, butter, and heavy whipping cream) or u can do like..... pizza... with artichokes and goatcheese or lagsagna (rocotta cheese mixed with basil, 1 egg. 1 tbls rosemary and salt) mozzarella cheese topped and baked
