  1. Frommer's Italy, Spain, and France; Rick Steves' Italy, Spain and France and Rick Steves' Europe through the Back Door; and DK books on Italy, Spain , and France, and Lonely Planet's Italy, Spain and France. Rick Steves also has books on some of the major cities in these countries .I would advise you to check them out if you are going to be in a major city. www.ricksteves.com www.lonelyplanet.com/worldguide/ us.dk.com/static/cs/us/11/travel/intro.html www.frommers.com You find them at your local Barnes and Noble; Borders , and other bookstores. www.bn.com and www.bordersstores.com I would advise to go to the bookstore and look at these book to see which one you like best. Personally, I like Rick Steves' books.
  2. I think you've got a very good answer from others here. But you need to use internet based tools to compare prices, locations and star ratings. This site is quite helpful for that: France:http://www.cheaperthanhotels.co.uk/France/ French Version:http://www.hotelsenfrancais.com/France/ Spain:http://www.cheaperthanhotels.co.uk/Spain/ Spanish Version:http://www.hotelsespanol.com/Spain/ Remember, hostels are priced per bed. Hotels are priced per room [ 2-3 beds ] . Serviced apartments can hold up to 4. Hotels have better amenities and save money on transport often with better locations - sometimes hotels are close to the same price.
