- They introduced the fattening pasta. Though pasta started in China thousands of years ago, their noodles were made from rice flour and were not that fatteing, but the Italians used wheat flour for their pasta making it a lot more fattening.
- Using a basic tomato sauce as the basis of many of their recipes. Turning pasta into heaps of different shapes and lengths. Using risotto rice as the basis for yummy risotto dishes. The mediterranean diet is considered to be the healthiest in the world eg Italian, Greek, Turkish food although the Italian diet can be a bit heavy in carbohydrate if you eat too much pasta. In Italy it is often served as an entree before meat or seafood dishes.
