Why does Italian food taste better the next day?

Every time I make lasagna or some other marinara/cheese heavy meal, it tastes a bajillion times better the next day, after it's been chilled in the fridge and nuked in my microwave. Any idea why? If anyone knows the chemical processes at work, that would be extra cool.

  1. When you marinade your food it sure does taste wonderful when you cook it and eat it. The process enhances your taste buds. Italian food is like that too. You prepare it, cook it, and the next day it's even better. It has more time to settle into the wonderful flavors. I enjoy Italian food too.
  2. I have no clue, but I am so with you on that one!!! Nothing tastes better than left over lasagna :)
  3. When the meal has just been made, it is easier to taste each of the individual ingredients. When the ingredients have had more time to "marinate" together (i.e. overnight) the flavors are more mixed together creating a flavor consistency throughout the dish that makes it taste all the more wonderful!

  5. I know exactly what you mean, it's the same for me. The reason is because the ingredients and their flavors all have time to whats called "merry" together, meaning they fold and intertwine into each other forming fabulous, deep, rich flavors, this is even more true if you use wine.
