History of Italian Rainbow cookies? (biscotti tre colori)?
I need to know where they were originated from and a little history on them.

- Here's what I could find, the only thing that puzzles me is that the Italian flag is green, red and white....but the cookies are usually green, pink/red & yellow!! Rainbow cookies or Italian flag cookies are pieces of tricolored marzipan cake. Its inner layers are separated by raspberry jam, and its outer layers are covered with chocolate. The three colors are usually red, yellow, and green, the colors of the flag of Italy, where the pastry was first made.
